I was gifted a dinner at Hide in London, and honestly, I’m still wrapping my head around it. When Hide first opened in 2018, it became London’s most talked-about restaurant overnight. It earned a Michelin star within just six months of opening. They are known for a dish called the ‘Nest Egg‘ – it’s their signature dish. It’s a custard-filled eggshell, served on what looks like a bird’s nest. Then came the “Flesh on Bone” plate—goose wrapped on a pheasant feather and ham wrapped around a faux bone. The rest of the meal was equally inventive. Yet, the standout for me was a dessert of strawberries, edible flowers, and a delicate chocolate shell. The cracked bowl is made of chocolate, shaped and textured to look like pottery.

I’ll try anything once. Here’s the thing: science actually backs up why it’s good to try new places like this. Novelty sparks dopamine in the brain, boosting memory, motivation, and even creativity. New experiences stick with us more than routine ones. This is probably why this dinner is still lodged in my mind.

So maybe that’s the hidden gift of a bougie night out somewhere new: you don’t just eat. You make a memory your brain won’t easily forget.
